Description

A vibrant and refreshing strawberry spinach salad with sweet berries, creamy feta, crunchy pecans, and a rich homemade balsamic glaze.


Ingredients

  • 10 oz baby spinach
  • 3 cups strawberries, hulled and sliced
  • 1 cup blueberries (optional)
  • 1/3 cup crumbled feta cheese
  • 1 cup toasted or candied pecans
  • 1 cup balsamic vinegar
  • 1/4 cup honey or brown sugar


Instructions

1. In a small saucepan, combine balsamic vinegar and honey and simmer over medium heat for about 10 minutes, stirring occasionally until reduced by half.

2. Remove from heat and let the balsamic glaze cool.

3. In a large bowl, add baby spinach, sliced strawberries, blueberries, and feta cheese.

4. Toss gently to combine all ingredients.

5. Sprinkle toasted or candied pecans over the top.

6. Drizzle with the cooled balsamic glaze just before serving.


Notes

You can substitute different berries such as raspberries or blackberries.

Swap feta with goat cheese or blue cheese for a different flavor.

Add grilled chicken or chickpeas to turn this into a complete meal.

The balsamic glaze can be made ahead and stored in the refrigerator for up to one week.
