Description

AMAZING MEDITERRANEAN CHICKEN GYROS are packed with flavor, featuring juicy marinated chicken, creamy homemade tzatziki, and fresh veggies all wrapped in soft pita bread. A perfect, wholesome meal for lunch or dinner.


Ingredients

For the Chicken Marinade:

  • 2 lbs boneless, skinless chicken thighs (cut into 1-inch pieces)
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 2 tablespoons dried oregano
  • 1 tablespoon dried rosemary
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

For Assembly:

  • 6 pita breads
  • 1/2 red onion, thinly sliced
  • 1 tomato, sliced
  • Optional: Feta cheese, Kalamata olives


Instructions

1. In a large bowl, combine all marinade ingredients. Add the chicken pieces and toss to coat evenly. Cover and refrigerate for at least 2 hours, or preferably overnight, for optimal flavor.

2. While the chicken is marinating, prepare the tzatziki sauce. In a medium bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, olive oil, lemon juice, and fresh dill. Season with salt and pepper to taste. Mix well and refrigerate until ready to use.

3. Preheat oven to 400°F (200°C). Spread the marinated chicken pieces in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the chicken is cooked through and slightly browned. Alternatively, you can pan-sear the chicken in batches over medium-high heat until cooked through and nicely browned.

4. Warm the pita bread in a dry skillet or microwave for a few seconds until pliable.

5. Spread a generous amount of tzatziki sauce on each pita bread. Add a layer of cooked chicken, followed by sliced red onion, and tomato slices. Top with optional feta cheese and Kalamata olives.

6. Fold the pita bread in half and serve immediately. Enjoy your homemade Mediterranean Chicken Gyros!


Notes

Marinate the chicken overnight for maximum flavor.

Use store-bought tzatziki in a pinch, but homemade is best.

Pita can be swapped with lettuce wraps for a low-carb version.
