Description

Healing and flavorful Anti-Inflammatory Chicken Soup with turmeric, ginger, and greens.


Ingredients

  • 1 lb chicken breast, boneless and skinless, bite-sized pieces
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground black pepper
  • 6 cups low-sodium chicken broth
  • 1 cup kale or spinach, chopped
  • 1 cup quinoa or brown rice, cooked
  • 1 lemon, juiced
  • Salt to taste
  • Fresh parsley, chopped for garnish


Instructions

  • Heat olive oil and sauté onion, carrots, and celery until softened.
  • Stir in garlic and ginger; cook until fragrant.
  • Add turmeric, cumin, and black pepper; stir to coat vegetables.
  • Add chicken pieces and cook until lightly browned.
  • Pour in broth; bring to boil then simmer for 20 minutes.
  • Add kale or spinach and quinoa; simmer 5 minutes more.
  • Stir in lemon juice, season with salt, and garnish with parsley.
