Ingredients
- 1 lb chicken breast, boneless and skinless, bite-sized pieces
- 1 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 tbsp fresh ginger, grated
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/2 tsp ground black pepper
- 6 cups low-sodium chicken broth
- 1 cup kale or spinach, chopped
- 1 cup quinoa or brown rice, cooked
- 1 lemon, juiced
- Salt to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil and sauté onion, carrots, and celery until softened.
- Stir in garlic and ginger; cook until fragrant.
- Add turmeric, cumin, and black pepper; stir to coat vegetables.
- Add chicken pieces and cook until lightly browned.
- Pour in broth; bring to boil then simmer for 20 minutes.
- Add kale or spinach and quinoa; simmer 5 minutes more.
- Stir in lemon juice, season with salt, and garnish with parsley.
