This baked feta pasta with salmon is a protein-packed twist on the viral classic, combining creamy baked feta, burst cherry tomatoes, and flaky seasoned salmon for a comforting and satisfying dinner.
Ingredients
- 1 pound cooked pasta
- 8 ounces salmon
- 1 block feta cheese
- Olive oil, to taste
- Seasoning of choice (such as salt, pepper, or Za’atar)
- 1 (10-ounce) container cherry tomatoes
- 3 cloves garlic, minced
Instructions
1. Season the salmon with salt, pepper, and your preferred seasoning blend.
2. Bake the salmon at 400°F for about 25 minutes, or until it flakes easily with a fork.
3. At the same time, place cherry tomatoes and the feta block in a baking dish. Add garlic, seasonings, and drizzle generously with olive oil.
4. Bake the tomato and feta mixture at 400°F for 25 minutes until tomatoes burst and feta softens.
5. Remove both pans from the oven. Mash the tomatoes and feta together until a creamy sauce forms.
6. Add the cooked pasta to the baking dish and stir to coat evenly with the sauce.
7. Break the baked salmon into pieces and gently fold it into the pasta.
8. Serve warm, mixing well so the salmon and sauce are evenly distributed.
Notes
Add extra vegetables like broccoli, zucchini, or spinach for more nutrition.
Canned diced tomatoes can be substituted for fresh cherry tomatoes if needed.
Crumbled feta may be used if a feta block is unavailable, though the texture may be slightly different.
