Description

This BBQ Chicken Pasta Salad is a flavorful, crowd-pleasing dish that combines tender barbecue-seasoned chicken with fresh vegetables and pasta, all tossed in your favorite BBQ sauce. Perfect for potlucks, picnics, or a quick summer dinner.


Ingredients

  • 2 chicken breasts, barbecue seasonings
  • 2 cups cooked pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • Your favorite barbecue sauce
  • Salt and pepper to taste


Instructions

1. Barbecue the chicken breasts on the grill, or pan-sear them if a BBQ isn’t available. Allow to cool.

2. While the chicken is cooling, cook the pasta according to the package instructions.

3. In a large bowl, combine the cooked pasta, diced cucumber, halved tomatoes, and cooled, diced chicken.

4. Drizzle with your favorite barbecue sauce, add salt and pepper to taste, and toss to combine.

5. Chill the salad in the refrigerator until serving.


Notes

Substitute the chicken with beef or venison for a different, yet delicious flavor profile.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

To keep the pasta from getting soggy, add the dressing just before serving.

This salad can be made a day ahead – just leave out the dressing and refrigerate the salad and dressing separately.
