Description

Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

1. Heat a tablespoon of olive oil in a large skillet over medium heat. Once hot, add the ground turkey and break it apart with a spatula. Cook until browned, about 6–8 minutes.

2. Add the diced zucchini, chopped onion, and minced garlic to the skillet. Stir and cook for 4–5 minutes until the vegetables begin to soften.

3. Sprinkle in the smoked paprika, chili powder, oregano, salt, and pepper. Stir well to coat the turkey and vegetables with the spices.

4. Add the drained diced tomatoes to the skillet. Stir everything together and let it simmer for about 10 minutes, allowing the flavors to meld and the mixture to thicken.
