Description

This Ground Turkey Soup is a light, healthy, and flavorful meal. It’s a great option for a quick weeknight dinner and can easily be customized with your favorite vegetables or grains.

Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups chicken broth (or vegetable broth)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • 1 cup cooked pasta or rice (optional)
  • Fresh parsley for garnish (optional)

Instructions

1. Heat the olive oil in a large pot over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spoon as it cooks. Season with a pinch of salt and pepper. Once browned, remove the turkey from the pot and set it aside.

2. In the same pot, add the chopped onion, garlic, carrots, celery, and zucchini. Sauté for about 5–7 minutes, or until the vegetables begin to soften.

3. Add the diced tomatoes (with juice) and chicken broth to the pot. Stir to combine. Bring the mixture to a simmer.

4. Stir in the dried thyme, oregano, and salt and pepper to taste. Let the soup simmer for 15–20 minutes, or until the vegetables are tender.

5. Return the cooked ground turkey to the pot. If desired, add frozen peas and cooked pasta or rice. Stir everything together and simmer for an additional 5–10 minutes to allow the flavors to meld.

6. Serve the soup hot, garnished with fresh parsley if desired.

Notes

This soup is easy to customize with whatever vegetables you have on hand.

For extra heartiness, add beans or lentils.

Great for meal prep and leftovers—flavors deepen overnight.

Use ground chicken or beef as an alternative to turkey.
