Ingredients
- 1 lb lean ground beef
- 1 lb russet potatoes, chopped
- 1/2 white onion, chopped
- 1 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 1/4 cup ketchup
- 1/4 cup dill pickles, chopped
- 1/4 cup water
- 1 tsp olive oil
- 2 tsp yellow mustard
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 vine tomato, chopped
- handful white onions, chopped
- handful shredded iceberg lettuce
- 1/4 cup dill pickle chips
Instructions
1. Preheat the oven to 375°F.
2. Cook chopped potatoes in olive oil and water until softened (5-10 minutes). Transfer to a baking dish.
3. In the same pan, cook ground beef and onions until browned. Season with salt, pepper, garlic powder, onion powder, and mustard. Combine with potatoes in the baking dish.
4. Layer shredded cheese on top and cover with foil. Bake for 15 minutes until cheese melts.
5. Prepare the Big Mac sauce by mixing mayonnaise, ketchup, chopped pickles, and dill pickle juice. Chill.
6. Remove casserole from the oven, drizzle with sauce, and top with lettuce, onion, tomato, and pickle chips before serving.
Notes
Feel free to add sesame seeds on top of the casserole for a true Big Mac vibe. To save time, you can use frozen diced potatoes instead of chopping fresh ones. This dish is also great for meal prep — just store portions in airtight containers and reheat as needed.
