Ingredients
- 2 cups bok choy, chopped
- 2 cups cooked chicken, shredded
- 2 carrots, sliced
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- Salt and pepper, to taste
- 2 tablespoons soy sauce (optional)
- Green onions, for garnish
Instructions
1. In a large pot, heat a bit of oil over medium heat. Add the diced onion, garlic, and ginger, sautéing until fragrant.
2. Add the carrots and cook for a few minutes until they begin to soften.
3. Pour in the chicken broth and bring to a simmer.
4. Add the shredded chicken and bok choy, cooking until the bok choy is tender.
5. Season with salt, pepper, and soy sauce if using.
6. Serve hot, garnished with green onions.
Notes
For best results, use homemade chicken broth or low-sodium store-bought broth. This soup is a great way to use up leftover rotisserie chicken. Add a few drops of sesame oil at the end for extra flavor.
