Ingredients
- 1/2 cup tapioca starch
- 1/4 cup brown sugar or muscovado
- 1/4 cup water
- Extra tapioca starch for dusting
Instructions
- Heat brown sugar and water until bubbling.
- Stir in half the tapioca starch quickly and remove from heat.
- Add remaining starch and knead into dough.
- Roll into ropes, cut into pieces, and shape into small balls.
- Boil in water for 30 minutes, then let sit in hot water another 30 minutes (30/30 method).
- Drain, rinse, and soak in brown sugar syrup.
- Serve immediately or store as directed.
Notes
- Use muscovado sugar for deeper flavor.
- Avoid refrigerating cooked pearls.
- Freeze raw pearls for later use.
