Ingredients
- 2 large chicken breasts (or thighs)
- 2 cups white beans (cannellini or great northern)
- 4 cups chicken broth
- 1 medium onion, chopped

- 1 red bell pepper, diced
- 1 jalapeño, sliced
- 2 tablespoons Cajun seasoning
- 4 ounces cream cheese
- 0.5 cup heavy cream
- 1 tablespoon lime juice
- 0.25 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
1. Season chicken with salt, pepper, and 1 tablespoon Cajun seasoning.
2. Sear in a Dutch oven with olive oil until golden on both sides.
3. Remove the chicken and shred.
