Healthy chicken pasta salad packed with protein, fresh vegetables, and a light vinaigrette—perfect for a quick lunch or light dinner.
Ingredients
- 2 medium cooked chicken breasts, shredded or chopped
- 2 ripe avocados, pitted and diced
- 1 pound cooked rotini pasta or similar
- 1/2 cup chopped red onion
- 1 cup cherry tomatoes, halved
- 1/2 cup freshly chopped basil
- Salt and freshly cracked pepper, to taste
- 1/2 cup white wine vinegar
- 1 tablespoon Italian seasoning
- 3/4 cup extra virgin olive oil
- Salt and pepper, to taste
Instructions
1. In a large bowl, combine the shredded chicken, cooked pasta, chopped red onion, diced avocado, cherry tomatoes, and fresh basil.
2. In a jar, mix together the white wine vinegar, Italian seasoning, olive oil, salt, and pepper until well combined.
3. Drizzle the dressing over the salad and toss gently until everything is evenly coated.
4. Serve immediately or refrigerate for later before serving.
Notes
Use rotisserie chicken for convenience and extra flavor.
Add the avocado just before serving to prevent browning.
Chill the salad for 30 minutes for enhanced flavor.
You can substitute whole wheat or gluten-free pasta if desired.
