Description
Chicken & Sweet Potato is a simple, wholesome, and incredibly satisfying dish featuring tender, seasoned chicken breasts and caramelized sweet potatoes. Perfect for a nourishing weeknight dinner or healthy meal prep.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- Fresh parsley for garnish (optional)
Instructions
1. Preheat your oven to 400°F (200°C).
2. Peel and cube the sweet potatoes into bite-sized pieces.
3. In a bowl, combine the garlic powder, paprika, salt, black pepper, and thyme. Rub this mixture over the chicken breasts until evenly coated.
4. On a large baking sheet, place the cubed sweet potatoes. Drizzle them with 2 tablespoons of olive oil, then sprinkle with salt and pepper. Toss to coat evenly.
5. Place the seasoned chicken breasts on the baking sheet alongside the sweet potatoes.
6. Drizzle the remaining tablespoon of olive oil over the chicken.
7. Put the baking sheet in the preheated oven and bake for 30–35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender and slightly caramelized.
8. Optional – sprinkle with fresh parsley before serving to add a touch of color and flavor.
9. Remove from the oven and let it rest for a few minutes before slicing the chicken. Serve hot.
Notes
To make cleanup easy, line your baking sheet with parchment paper. This meal also reheats well, making it ideal for weekly meal prep. You can swap sweet potatoes with butternut squash for a seasonal twist.
