Description

A refreshing and flavorful salad featuring sweet peaches, savory chickpeas, and a tangy honey-lime dressing.


Ingredients

  • 1 (15-ounce) can chickpeas, rinsed and drained (425g)
  • 2 ripe peaches, pitted and diced
  • 1/2 cup red onion, thinly sliced (75g)
  • 1/2 cup cucumber, diced (75g)
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup crumbled feta cheese (optional) (30g)
  • 3 tablespoons lime juice, freshly squeezed (45ml)
  • 2 tablespoons honey (30ml)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste


Instructions

  • In a small bowl or jar, whisk together the lime juice, honey, olive oil, and Dijon mustard. Season with salt and pepper to taste.
  • In a large mixing bowl, combine the rinsed and drained chickpeas, diced peaches, thinly sliced red onion, diced cucumber, and chopped fresh mint leaves. If using, add the crumbled feta cheese.
  • Pour the honey-lime dressing over the salad ingredients. Toss gently to ensure everything is evenly coated.
  • For the best flavor, chill the salad in the refrigerator for at least 15 minutes before serving.

Notes

  • Vegan Option: Omit the feta cheese or substitute with a plant-based alternative. Use maple syrup or agave instead of honey.
  • Make Ahead: Prepare salad components and dressing separately; combine just before serving.
