Description

Classic Crock Pot Marry Me Chicken is a rich, creamy, and flavorful dish featuring tender chicken breasts simmered slowly in a luscious sun-dried tomato and herb cream sauce. With just a few simple steps and one slow cooker, you’ll create a comforting and elegant meal that’s perfect for a romantic dinner or cozy family night.


Ingredients

  • 4 chicken breast fillets (with or without skin)
  • 2 tsp dried Italian herb blend
  • Salt and black pepper, to taste
  • 1 tbsp unsalted butter
  • 1 tsp olive oil
  • 1/2 cup white wine plus 1/2 cup water, or 1 cup chicken broth
  • 4 tbsp chopped sun-dried tomatoes, drained
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tsp chicken bouillon granules (if using wine)
  • 2-3 tbsp grated Parmesan cheese
  • 1 cup sour cream or heavy cream
  • 1 tbsp cornstarch mixed with 2 tbsp cold water (optional)
  • 2 tbsp chopped flat leaf parsley or fresh basil


Instructions

1. Pat the chicken breast fillets dry with paper towels. Season both sides with salt, black pepper, and Italian herb blend.

2. Heat butter and olive oil in a pan or use the slow cooker’s browning function. Sear chicken for 2–3 minutes per side until golden.

3. Transfer browned chicken to the slow cooker. Pour in white wine and water (or chicken broth). Sprinkle with paprika, garlic powder, and bouillon if using wine. Add sun-dried tomatoes around the chicken.

4. Cover and cook on LOW for 90 minutes to 2 hours, until chicken is tender and reaches 165°F (75°C).

5. If a thicker sauce is desired, stir in the cornstarch slurry during the last 10 minutes of cooking. Let the sauce thicken slightly.

6. Push chicken to one side and stir in sour cream or heavy cream. Add Parmesan cheese and fresh herbs, mixing until smooth.

7. Serve hot over rice, pasta, or mashed potatoes. Spoon plenty of sauce over each serving and garnish with more herbs if desired.


Notes

This dish is ideal for make-ahead meals or romantic dinners at home.

If using sour cream, you may not need cornstarch to thicken the sauce.

Use freshly grated Parmesan and fresh herbs for the best flavor and texture.

The creamy sauce is also delicious over steamed vegetables or crusty bread.

Customize with skin-on or skinless chicken based on preference.
