Description

Cottage Cheese Mozzarella Bites are crispy, gooey, protein-packed snacks that are gluten-free and perfect for any occasion.


Ingredients

  • 1 cup cottage cheese, well-drained
  • 1 cup shredded mozzarella cheese (can substitute with cheddar or provolone)
  • 1 large egg (or flax/chia egg for vegan option)
  • 1 cup almond flour (or oat flour for nut-free option)
  • 1 teaspoon garlic powder (optional)
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon olive oil (for brushing, optional)
  • 1 tablespoon chopped fresh herbs (such as parsley or basil, optional)


Instructions

1. Preheat your oven to 375°F (190°C). If using an air fryer, set it to 370°F.

2. In a large mixing bowl, combine well-drained cottage cheese, shredded mozzarella, egg, almond flour, garlic powder, salt, and pepper. Mix until a thick and cohesive mixture forms.

3. Using a cookie scoop or your hands, form bite-sized portions about 1 to 1.5 inches in diameter. Place them on a parchment-lined baking tray.

4. Bake in the oven for 18–20 minutes or in the air fryer for 12–15 minutes until golden brown and crispy.

5. Allow the bites to cool for 2–3 minutes before serving.

6. Brush with olive oil and sprinkle with chopped herbs if desired.


Notes

Make sure the cottage cheese is well-drained to avoid excess moisture in the bites.

Avoid overcrowding on the baking tray to ensure even baking and browning.

These are best served fresh but can be stored in the fridge and reheated in the oven or air fryer.
