Description

This Creamy Avocado Pasta Salad is a fresh, healthy, and flavorful dish made with ripe avocados, cilantro, and lime. It’s quick to prepare and perfect for a light lunch or summer side.


Ingredients

  • 2 ripe avocados
  • 250g pasta of your choice
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Optional: cherry tomatoes, cubed grilled chicken, or beans


Instructions

1. Cook pasta in a large pot of boiling salted water until al dente. Drain and rinse under cold water to cool.

2. In a blender or food processor, combine avocados, lime juice, olive oil, a pinch of salt, and pepper. Blend until smooth and creamy.

3. In a mixing bowl, toss the cooled pasta with the avocado dressing until evenly coated.

4. Add chopped cilantro and any optional ingredients such as cherry tomatoes, grilled chicken, or beans. Mix gently to combine.

5. Chill in the refrigerator briefly before serving to allow the flavors to meld.


Notes

For a spicier version, add sliced jalapeños or a pinch of cayenne pepper to the avocado dressing.

Lemon juice can be used instead of lime juice for a different citrus flavor.

Best served chilled or at room temperature.

Great as a vegetarian main or a side dish at picnics and potlucks.
