Description

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 2 cups sharp cheddar cheese, grated
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup seasoned breadcrumbs
  • 1 tsp garlic powder
  • Salt and pepper to taste


Instructions

1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2. Season chicken breasts with salt and pepper. Cook in a skillet over medium heat with olive oil for 6–7 minutes per side until cooked through. Let rest, then dice.

3. Steam broccoli florets for 3–4 minutes until bright green and crisp-tender. Set aside.

4. In a bowl, mix cream of mushroom soup, garlic powder, half the grated cheddar, salt, and pepper until smooth.

5. In another bowl, combine diced chicken and broccoli. Pour the soup mixture over them and stir gently to combine.

6. Transfer the mixture to the prepared baking dish and spread evenly.

7. Top with the remaining cheddar cheese and sprinkle seasoned breadcrumbs over the top.

8. Bake uncovered for 25–30 minutes until hot, bubbly, and golden brown on top.

9. Let cool slightly before serving.


Notes

You can use rotisserie chicken to save time. Add cooked rice or pasta to make it a complete one-dish meal. For extra flavor, mix in sautéed onions or a pinch of red pepper flakes. Substitute cream of chicken soup for mushroom if preferred.
