Description

This creamy slow cooker chicken pasta is the perfect cozy meal. Juicy shredded chicken, tender pasta, and a rich Parmesan-infused broth come together in one comforting, easy crockpot dish.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tablespoon minced garlic
  • ½ onion, finely chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 cups chicken broth
  • 2 cups milk
  • ¼ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 8 oz penne pasta (or your preferred pasta)
  • 2 tablespoons cornstarch + 2 tablespoons cold water
  • Fresh parsley, chopped (for garnish)
  • Additional grated Parmesan for topping (optional)


Instructions

1. Place chicken breasts, garlic, onion, Italian seasoning, salt, pepper, and chicken broth into a slow cooker.

2. Cook on low for 6-7 hours or on high for 3-4 hours, until chicken is fully cooked and tender.

3. Remove the chicken, shred it with two forks, then return to the crock pot.

4. Add the pasta, milk, and heavy cream. Stir to combine.

5. Cook on high for an additional 30-40 minutes, or until pasta is cooked al dente.

6. Mix cornstarch and water together in a small bowl, then stir into the soup to thicken it.

7. Stir in Parmesan cheese and let melt through the soup.

8. Serve hot, garnished with parsley and extra Parmesan if desired.


Notes

Be sure to stir occasionally during the final cooking stage to prevent the pasta from sticking.

Use freshly grated Parmesan for best flavor and melting quality.

You can substitute penne with rotini, shells, or another short pasta.

This dish thickens as it cools — add a splash of broth or milk when reheating leftovers.
