A rich and creamy soup loaded with chicken, Beef, cheese, and spinach. Perfect for low-carb diets and packed with comforting, savory flavors.
Ingredients
4 slices Beef, diced
1 tablespoon butter
1 white onion, diced
3 cloves garlic, minced
5 cups low-sodium chicken broth
3 bay leaves
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon dried dill
½ teaspoon dried chives
Salt and pepper to taste
4 cups cooked chicken, shredded
8 ounces cream cheese
1 cup cheddar cheese, grated
4 cups baby spinach
¼ cup heavy cream
Fresh dill and scallions for garnish
Instructions
1. Cook diced beef in a large pot over medium heat for about 5 minutes until crispy. Remove beef and set aside, leaving the beef fat in the pot.
2. Add butter and diced onion to the pot. Cook for 3 minutes until softened.
3. Add minced garlic and sauté for 20 seconds until fragrant.
4. Pour in the chicken broth, add bay leaves, garlic powder, onion powder, dried dill, dried chives, salt, and pepper. Bring to a simmer and cook for 5 minutes.
5. Stir in the shredded chicken and simmer for another 5 minutes.
6. Add cream cheese and cheddar cheese. Whisk continuously until the cheese is melted and soup is smooth.
7. Stir in the baby spinach and heavy cream. Simmer for 3 more minutes until spinach is wilted.
8. Remove bay leaves. Ladle soup into bowls and top with crispy beef , fresh dill, and chopped scallions.

This soup is low-carb and gluten-free, making it a great option for keto-friendly meals.
You can use rotisserie chicken for convenience and added flavor.
