This creamy high-protein pasta salad is loaded with fresh veggies, tender chicken, and a tangy lemon Greek yogurt dressing. A healthy, protein-packed dish perfect for meal prep or as a refreshing side.
Ingredients
- 2 cups plain Greek yogurt
- 2 tablespoons Dijon mustard
- 2 tablespoons lemon juice
- 2 teaspoons garlic powder
- 12 oz. Brami fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup English cucumber, chopped
- 1 pound cooked chicken breast, diced
- 4 oz. fresh mozzarella
- 2 tablespoons fresh herbs, chopped
- Salt and pepper to taste
Instructions
1. Cook the pasta according to the package directions until al dente. Drain and rinse under cold water.
2. In a small bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, and garlic powder until smooth.
3. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, diced chicken breast, fresh mozzarella, and chopped herbs.
4. Pour the dressing over the salad ingredients and gently stir until evenly coated.
5. Season with salt and pepper to taste.
6. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Add a drizzle of olive oil to thin the dressing if needed.
