Crock Pot Angel Chicken Recipe: Easy & Creamy Comfort Meal

Description

Tender chicken breasts slow-cooked in a creamy Italian-inspired sauce, served over angel hair pasta for an easy and comforting dinner.


Ingredients

  • 1 tbsp vegetable oil (12 tablespoons for searing)
  • Salt and pepper to taste
  • 1.5 lbs boneless skinless chicken breasts (about 2 large breasts)
  • 4 oz cream cheese (½ block, softened to room temperature)
  • 3 tbsp unsalted butter (softened to room temperature)
  • 10.5 oz cream of chicken soup (recommend low or no sodium)
  • 3 cloves garlic, minced
  • 0.75 cup chicken broth (recommend low or no sodium)
  • 0.7 oz Good Seasons Dry Italian Salad Dressing Mix (1 packet)
  • 16 oz angel hair pasta (1 box)
  • Fresh parsley, cracked pepper, or Parmesan cheese (optional for serving)


Instructions

1. Heat cast iron skillet over medium-high heat. Add 1–2 tablespoons vegetable oil and swirl to coat the bottom of the pan. Sprinkle salt and pepper to taste over both sides of chicken breasts. Once the pan is hot, add chicken breasts and sear each side for 2–3 minutes or until golden brown. Remove from heat.

2. In a medium bowl, add softened cream cheese and softened butter. Whisk until smooth with no lumps remaining. Add cream of chicken soup, minced garlic, chicken broth, and dry Italian salad dressing mix to the same bowl. Whisk thoroughly to fully combine all ingredients.

3. Spray the inside of crock pot with non-stick cooking spray. Place seared chicken breasts in the bottom of the pot. Pour the prepared soup mixture evenly over the top of the chicken breasts, making sure they’re well coated.

4. Cover and cook on low for 3–4 hours, or until chicken reaches an internal temperature of 165°F. Always check doneness with a meat thermometer rather than relying solely on time. Do not cook on high as the chicken won’t get as tender.

5. Shortly before serving, cook angel hair pasta according to package instructions until al dente. Drain when cooked. Serve chicken and sauce over pasta, or toss pasta directly in the sauce for maximum flavor. Garnish with chopped fresh parsley, cracked pepper, and/or grated Parmesan cheese if desired.


Notes

If sensitive to sodium, use no-sodium products (cream of chicken and chicken broth) then add salt to taste. Can use chicken thighs for a more affordable option. Can skip browning chicken and place directly in crock pot, but will need to cook closer to 6 hours on low. Any pasta type will work including fettuccini, spaghetti, linguini, penne, rigatoni, or bow tie pasta. Can also serve over mashed potatoes or rice. Store leftovers in an airtight container for up to 3–4 days in refrigerator or freeze up to 3 months.
