Description

A cozy, flavorful soup combining all the goodness of stuffed peppers into a comforting dish made in a slow cooker.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1 medium onion, diceda
  • 3 medium bell peppers, diced
  • 1 cup uncooked rice
  • 28 oz can diced tomatoes
  • 4 cups beef broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: shredded cheese, sour cream, fresh herbs


Instructions

1. In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft. Drain excess fat.

2. Transfer the beef mixture to your crock pot. Add chopped bell peppers, uncooked rice, diced tomatoes, beef broth, Italian seasoning, salt, and pepper.

3. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.

4. Once cooked, stir well and enjoy hot, garnished with cheese, sour cream, or fresh herbs.


Notes

This soup stores beautifully; cool before transferring to an airtight container. It will keep fresh in the refrigerator for up to 4 days or frozen for up to 3 months. When reheating, add a splash of broth or water if it becomes thick.
