Description

A simple and flavorful crockpot chicken avocado lime soup packed with tender chicken, fresh herbs, spices, and zesty lime juice, perfect for a healthy family meal.


Ingredients

  • 3 boneless skinless chicken breasts
  • 2 (32 oz.) cartons chicken broth
  • 1½ cups green onion, sliced (green & white parts)
  • 4 roma tomatoes, diced
  • 3 garlic cloves, minced
  • 2 jalapeños, deseeded and minced
  • 1 tsp cumin
  • â…“ cup fresh lime juice
  • â…“ cup cilantro, chopped
  • Salt and black pepper, to taste
  • 3–4 large avocados, diced (for serving)
  • Tortilla strips, chopped cilantro, lime wedges, sliced green onion (optional toppings)


Instructions

1. Place chicken breasts in the crockpot and season generously with salt and black pepper.

2. Add chicken broth, green onion, tomatoes, garlic, jalapeños, and cumin. Cover and cook on low for 5–7 hours.

3. Remove chicken breasts, shred with two forks, and return to the crockpot.

4. Stir in lime juice and chopped cilantro just before serving.

5. Serve hot topped with diced avocado, tortilla strips, extra cilantro, and desired toppings.


Notes

You can substitute raw chicken with 3–4 cups of pre-cooked shredded chicken.

Adjust jalapeños to control spice level.

Add avocado just before serving to maintain freshness and texture.
