Ingredients
4 cups cubed watermelon
1 English cucumber, thinly sliced
1/4 cup thinly sliced red onion
2 tbsp fresh lime juice
1 tbsp extra virgin olive oil
1/2 cup crumbled feta cheese
1/4 cup chopped fresh cilantro
Instructions
1. In a small bowl, toss red onion slices with 1 tbsp lime juice. Let marinate for 10-15 minutes.
2. In a large mixing bowl, combine watermelon cubes, cucumber slices, and marinated onions.
3. Drizzle with olive oil and remaining 1 tbsp lime juice. Toss gently to combine.
4. Top with crumbled feta and chopped cilantro just before serving.
Notes
For vegan option, substitute feta with vegan cheese. Marinate onions at least 10 minutes for balanced flavor. Serve chilled for maximum freshness. Store in an airtight container for up to 1 hour before serving.
