Description

Ingredients

  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, diced
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • Fresh parsley, for garnish


Instructions

1. Preheat the oven to 375ยฐF (190ยฐC). Lightly grease a 9ร—13-inch baking dish to prevent sticking.

2. In the prepared dish, add the uncooked rice, chicken broth, tzatziki sauce, oregano, garlic powder, salt, and pepper. Stir well so the flavors are evenly distributed.

3. Stir in the cooked chicken, cucumber, tomatoes, and onion. Spread everything out evenly in the dish.

4. Cover with foil and bake for about 35โ€“40 minutes, or until the rice is cooked through and has absorbed most of the liquid.

5. Remove the foil, sprinkle the mozzarella evenly over the top, and return to the oven for another 5โ€“7 minutes until melted and bubbly.

6. Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley for a burst of color and freshness.
