Ingredients
For the Soup Base
- 4 cups Beef Broth (substitute with vegetable broth for vegetarian option)
- 1 cup Water
- 14 oz Canned Diced Tomatoes
For the Vegetables
- 1 cup Carrot, sliced (can be swapped with parsnips)
- 1 cup Celery, sliced
- 1 cup Onion, diced (shallots can be used for a milder taste)
- 2 cloves Garlic, minced (garlic powder works in a pinch)
- 1 cup Potato, diced (sweet potatoes can be a delicious alternative)
For the Noodles
- 1 cup Alphabet Noodles (use small pasta shapes if unavailable)
Seasonings
- 1 tbsp Italian Seasoning (mixed dried herbs can be a great substitute)
- Salt & Pepper, to taste (adjust according to the saltiness of the broth)
Instructions
1. In a large pot, heat 2 tablespoons of olive oil over medium heat until it shimmers gently.
2. Add sliced carrots, celery, diced onion, and minced garlic to the pot. Sauté for 5-7 minutes until softened.
3. Pour in beef broth and water, followed by canned diced tomatoes. Stir and bring to a gentle boil.
4. Once boiling, add diced potatoes and Italian seasoning. Season with salt and pepper. Reduce heat and let simmer uncovered for about 15 minutes.
5. Add alphabet noodles to the simmering soup and cook for an additional 7-8 minutes until al dente.
6. Ladle the warm soup into bowls and garnish with freshly chopped parsley or basil, and sprinkle with grated Parmesan if desired.
Notes
Keep a close eye on the noodles to avoid overcooking. Simmer longer for deeper flavors. Use quality broth for best results. Store leftovers in an airtight container in the refrigerator for up to 3 days. This soup can be frozen without the noodles to avoid mushy texture upon reheating.
