Description

This Easy Chicken & Stuffing Casserole is a comforting, crowd-pleasing dish made with simple ingredients and minimal prep. Creamy, savory, and topped with buttery stuffing, it’s the perfect weeknight dinner solution.


Ingredients

  • 3 cups cooked chicken, shredded or chopped
  • 1 package (6 oz) seasoned stuffing mix
  • 1 cup chicken broth
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • ½ cup sour cream
  • 2 tablespoons butter, melted
  • ¼ cup chopped celery (optional)
  • ¼ cup chopped onion (optional)
  • 1 teaspoon dried parsley (or fresh parsley for garnish)
  • Salt and pepper to taste


Instructions

1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.

2. In a large mixing bowl, combine the cooked chicken, cream of mushroom soup, sour cream, chicken broth, chopped celery and onion if using, and salt and pepper. Stir until well combined.

3. In a separate bowl, add the stuffing mix and pour melted butter over it. Stir gently to evenly coat the stuffing.

4. Spread half of the buttered stuffing evenly in the bottom of the prepared baking dish.

5. Spoon the creamy chicken mixture over the stuffing layer and spread it evenly.

6. Top with the remaining stuffing to create a crunchy topping.

7. Bake uncovered for 30 to 35 minutes, until the casserole is bubbly and the top is golden brown.

8. Remove from the oven, let it rest for a few minutes, garnish with parsley if desired, and serve warm.


Notes

Use cream of chicken soup instead of cream of mushroom if preferred.

Add frozen vegetables like peas or mixed vegetables for more texture and nutrition.

This dish is great for using up leftover rotisserie or baked chicken.

Make ahead and refrigerate—just bake when ready to serve.
