Ingredients
- 1.5 lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tbsp olive oil
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp red pepper flakes (adjust to taste)
- 2 tbsp chopped fresh parsley
Instructions
1. In a bowl, toss chicken pieces with salt, pepper, paprika, and garlic powder.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken in batches and cook until golden brown and cooked through. Set aside.
3. In the same skillet, melt butter. Stir in garlic, lemon juice, Dijon mustard, red pepper flakes, and parsley. Cook for 1 minute until fragrant.
4. Return the cooked chicken to the skillet and toss in the cowboy butter until fully coated.
5. Let simmer for 1 more minute.
6. Garnish with extra parsley and serve immediately.
