Description

This easy cream cheese chicken is a quick and comforting 30-minute meal made with pantry staples. Juicy chicken is smothered in a creamy garlic herb sauce—perfect for busy weeknights.


Ingredients

  • 8 ounces cream cheese (a block of Philly), softened
  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • Fresh chopped parsley (optional, to taste)


Instructions

1. Microwave the cream cheese until very soft. Cut it into smaller pieces and set aside.

2. Cut the chicken breasts in half lengthwise to make 4 thinner pieces. Season with garlic powder, salt, and pepper.

3. In a large skillet, melt butter and oil over medium-high heat. Add the chicken and cook for about 5–6 minutes per side, or until golden and cooked through. Transfer chicken to a plate.

4. Reduce heat to medium. Add onions and sauté for 5–7 minutes until softened and lightly browned.

5. Stir in the garlic and cook for 30 seconds.

6. Add chicken broth, softened cream cheese, Italian seasoning, and red pepper flakes. Stir until the sauce is smooth.

7. Return the chicken to the skillet and warm through. If the sauce is too thick, add a splash of broth to thin.

8. Taste and adjust seasoning with extra salt and pepper as needed. Garnish with parsley if desired, and serve immediately.


Notes

For best results, use a block of full-fat cream cheese, not the spreadable kind.

Pairs well with pasta, rice, or mashed potatoes.

You can add spinach or mushrooms for extra veggies.
