Greek lemon rice is quick and easy to prepare, requiring just a handful of ingredients. Despite its simplicity, the depth of flavor it delivers makes it a standout dish for any meal.
Ingredients
Rice Base:
- 1 cup long-grain white rice, rinsed
Aromatic Foundations:
- 2 tablespoons olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
Liquid Components:
- 2 cups chicken broth
- Juice and zest of 1 large lemon
Herbal Enhancements:
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped (optional)
Seasonings:
- Salt and freshly ground black pepper, to taste
Instructions
1. In a medium saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
2. Add the rinsed rice to the saucepan, stirring continuously for 1-2 minutes to coat the grains with the oil and aromatics. This step enhances the rice’s flavor and prevents sticking.
3. Pour in the chicken broth, lemon juice, and lemon zest. Stir to combine, then bring the mixture to a boil.
4. Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
5. Remove the saucepan from heat. Fluff the rice with a fork, then gently fold in the chopped parsley and dill (if using). Season with salt and freshly ground black pepper to taste.
6. Transfer the lemon-infused rice to a serving dish, garnish with additional fresh herbs if desired, and serve warm alongside your favorite Mediterranean dishes.
Notes
To make this dish vegetarian, substitute vegetable broth for chicken broth. For a more vibrant lemon flavor, add extra zest just before serving.
