You and your family are going to love this easy and healthy Sloppy Joe Biscuit Bake recipe. It makes weeknight meal time easy because it’s quick, balanced, and absolutely delicious!
Ingredients
- 1 lb. 96% lean ground beef
- 1 medium yellow bell pepper (140g), diced
- 1 yellow onion (170g), diced
- 8 oz. bella mushrooms, finely diced
- 1/2 cup 2% shredded Colby jack cheese (56g)
- 1 10.2-oz. can GRANDS homestyle buttermilk biscuits (5 ct.)
- Sloppy Joe Sauce:
- 1 8-oz. can tomato sauce (226g)
- 1/2 cup sugar-free ketchup (120g)
- 2 cloves garlic, minced
- 2 Tbsp Worcestershire sauce (30g)
- 1 Tbsp brown sugar (12g)
- 2 tsp dry mustard
- 1 tsp onion powder
Instructions
1. Preheat the oven to 350°F. Spray an 8×11” baking dish with cooking spray (a 9×13” also works). Wash and prepare your veggies.
2. To a large skillet, add the ground beef and season with salt and pepper to taste. Cook on medium heat, stirring frequently and breaking into smaller pieces, until beef is no longer pink. Transfer to a large mixing bowl.
3. Spray the same skillet with cooking spray. Add diced pepper, onions, and mushrooms. Cook over medium heat until veggies are tender, about 6–7 minutes. Transfer to the bowl with the beef.
4. In a separate mixing bowl, whisk together all sloppy joe sauce ingredients until combined. Pour sauce into the bowl with the beef and veggies, and stir to combine.
5. Add the sloppy joe mixture to the prepared baking dish. Sprinkle cheese evenly over the top.
6. Cut each biscuit into four pieces and place evenly across the top of the mixture.
7. Bake for 25 minutes, or until the tops of the biscuits are golden brown. Optionally flip or broil for more browning on biscuit bottoms.
Notes
If you prefer fully cooked biscuit bottoms, you can flip and bake an additional 10–15 minutes, broil for a minute, or bake biscuits separately and add them on top at the end. This dish is macro-friendly and high in protein — perfect for weeknight meals or meal prep!
