Description
Here’s an easy saucy ramen noodles recipe with a thick and flavourful sauce! You can also add in whatever veggies of your choice or even some tofu and mushrooms! The sauce is really versatile so you can opt to even use it for stir-fries. Slurp away and enjoy!
Ingredients
Noodles:
- 2 servings dry instant ramen noodle cakes or other noodles of choice (around 140 g total)
For Sautéing:
- 10 oz extra firm tofu, veggies, or mushrooms of choice, sliced
Sauce:
- 1 cup water or vegetable broth
- 5-7 tbsp soy sauce (adjust according to desired taste)
- 1.5 tsp dark soy sauce (optional for colour)
- 2-3 tbsp corn starch
- 1-3 tbsp sugar, maple syrup, or other liquid sweetener
- 2 tbsp rice vinegar, white vinegar, or lemon juice
- 1/4 tsp ground pepper
- 1/2 tbsp chili garlic sauce or other hot sauce (optional)
- 1 tbsp sesame oil
- 2 cloves garlic, minced (optional)
For Serving:
- Chopped scallions for topping
- Sesame seeds for topping
Instructions
1. Mix all the sauce ingredients until well incorporated. Adjust the measurements to your taste preference. Set aside.
2. Boil water in a small pot over high heat. Once boiling, add in the ramen or noodles of choice.
3. Half cook the noodles until still very chewy, about 2–3 minutes less than package instructions. Drain and set aside.
4. Run noodles under cold water to stop cooking and remove excess starch (optional).
5. While noodles cook, heat a pan over medium-high heat and add a little oil.
6. Sauté the tofu, mushrooms, or vegetables for a few minutes until cooked to your liking.
7. Give the sauce a good mix to ensure the starch is fully incorporated. Pour into the pan and simmer for 2–3 minutes until slightly thickened.
8. Add the noodles to the pan and toss to coat in the sauce.
9. Cook for another 3 minutes, allowing the noodles to absorb the sauce and thicken.
10. Taste and adjust seasoning if needed with soy sauce, sweetener, or pepper.
11. Garnish with sesame seeds and scallions. Serve hot and enjoy!
Notes
If using a lot of vegetables or noodles, double the sauce to keep it nice and saucy.
Start with less soy sauce if using a salty vegetable broth.
To thicken later, mix cornstarch with water before adding to the pan.
Add your choice of protein like tofu or tempeh for extra heartiness.
Chili garlic sauce or hot sauce can add a nice kick if desired.
