Description

Easy Sautéed Mushrooms with Spinach is a simple yet delicious side dish that combines earthy mushrooms with fresh spinach, all sautéed to perfection in garlic and olive oil. This dish is healthy, quick to make, and a perfect addition to any meal, from steaks to pasta or even as a topping for roasted chicken.


Ingredients

  • 2 cups fresh mushrooms, sliced (button or cremini mushrooms work best)
  • 2 cups fresh spinach, washed and chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme or fresh thyme (optional)
  • 1 tablespoon butter (optional for extra flavor)
  • 1 tablespoon balsamic vinegar (optional for a richer flavor)
  • Fresh parsley, chopped (for garnish)


Instructions

1. Clean and slice the mushrooms. Wash and chop the spinach into bite-sized pieces.

2. Heat olive oil in a large skillet over medium heat.

3. Add the sliced mushrooms and sauté for 5-7 minutes until they release their moisture and begin to brown. Stir occasionally to ensure even cooking.

4. Add the minced garlic to the skillet and sauté for another 1 minute until fragrant.

5. Add the spinach and continue to cook for 2-3 minutes, stirring occasionally, until the spinach wilts and reduces in size.

6. Season the sautéed mushrooms and spinach with salt, black pepper, and dried thyme (if using).

7. Optionally, stir in the butter and balsamic vinegar for added richness and flavor. Continue cooking for another minute.

8. Transfer the sautéed mushrooms and spinach to a serving dish.

9. Garnish with freshly chopped parsley and serve immediately.


Notes

For extra flavor, you can add a squeeze of fresh lemon juice just before serving.

If you want a bit of heat, you can add a pinch of red pepper flakes along with the garlic.

This dish is easily customizable by adding other vegetables like onions, bell peppers, or zucchini.
