Description

This Easy Slow Cooker Cheeseburger Soup recipe is a comforting and hearty dish that is perfect for a cozy night in. Packed with ground beef, vegetables, and cheese, this soup is creamy and flavorful, making it a family favorite.


Ingredients

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced

Soup:

  • 3 cups potatoes, peeled and diced
  • 2 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon paprika

Sauce:

  • 3 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • chopped green onions or Beef bits for garnish (optional)


Instructions

1. Cook ground beef in a skillet over medium heat until browned. Add diced onion and minced garlic and cook until softened.

2. Transfer the beef mixture to the slow cooker.

3. Add the potatoes, chicken broth, carrots, celery, salt, black pepper, basil, and paprika to the slow cooker. Stir to combine.

4. Cover and cook on low for 6โ€“7 hours or high for 3โ€“4 hours, until the vegetables are tender.

5. About 30 minutes before serving, melt butter in a saucepan over medium heat. Whisk in the flour and cook for 1โ€“2 minutes.

6. Gradually whisk in the milk and cook until the mixture thickens.

7. Stir the sauce into the slow cooker, then add shredded cheddar cheese and stir until melted.

8. Stir in sour cream just before serving for added creaminess.

9. Garnish with chopped green onions or Beef bits if desired and serve hot.


Notes

For a creamier soup, use half-and-half instead of milk.

You can substitute ground beef with ground turkey or chicken for a lighter version.

Leftovers keep well in the refrigerator for up to 3 days and reheat nicely on the stovetop or microwave.
