Description

Sweet Potato and Apple Soup combines the earthy sweetness of roasted sweet potatoes with the tangy brightness of apple and creamy finish. A comforting, easy-to-make soup perfect for cozy dinners.


Ingredients

  • 2 sweet potatoes (1 lb each), quartered
  • 1 large tart apple, peeled and cored
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 large carrot, chopped
  • 1 bay leaf
  • 5 cups chicken broth
  • 1 cup cream
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • 1 cup crumbled goat or feta cheese


Instructions

1. Preheat oven to 400°F (200°C).

2. Place sweet potatoes and apple on greased baking sheet.

3. Roast 40 minutes until tender.

4. Cool and peel sweet potatoes.

5. Heat olive oil in a soup pot.

6. Add onion, celery, carrot, bay leaf; sauté 5–7 minutes.

7. Remove bay leaf.

8. Add broth, roasted sweet potatoes, and apple.

9. Simmer 10 minutes.

10. Blend until smooth.

11. Stir in cream, lemon zest, and juice.

12. Season with salt and pepper.

13. Warm through gently.

14. Serve topped with goat cheese.


Notes

Adjust thickness with extra broth if needed.

Add cinnamon, nutmeg, or cayenne for warmth.

Make it vegan with coconut milk and vegetable broth.

Freeze without cream; add it after reheating.
