Description

This Family Favorite Macaroni Salad is a vibrant, creamy delight full of fresh veggies and flavor. Perfect for lunches, potlucks, or as a refreshing side dish, it combines tender pasta with a zesty, herbed dressing that everyone will love.


Ingredients

  • 1 lb uncooked macaroni pasta
  • 0.5 cup diced red onion
  • 1 medium red bell pepper
  • 3 short celery ribs
  • 0.25 cup diced green onion
  • 2 tbsp minced fresh parsley
  • 1 tbsp minced fresh dill weed
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 1 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1.5 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt


Instructions

1. Boil the macaroni pasta in salted water according to package instructions until al dente, about 8 minutes. Drain and cool.

2. Dice the red onion, red bell pepper, celery, green onion, parsley, and dill weed while pasta cooks.

3. In a large mixing bowl, combine the cooled pasta with the diced vegetables and herbs. Fold together gently.

4. In a separate bowl, whisk the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, brown sugar, garlic powder, black pepper, and salt.

5. Pour the dressing over the pasta mixture and stir until evenly coated.

6. Cover and refrigerate for at least 2 hours before serving to allow flavors to meld.


Notes

Optional: Garnish with extra parsley before serving.

You can substitute Greek yogurt for mayonnaise, or use tarragon instead of dill for a different flavor profile.
