Description

This Cilantro Lime Pasta Salad is full of fresh flavour, vibrant colours, and nourishing ingredients like chickpeas, cucumber, and corn kernels. Everything gets coated with a creamy, zesty cilantro lime & avocado dressing made with greek yogurt for extra protein and that perfect creamy pasta salad texture.


Ingredients

For the Cilantro Lime Dressing:

  • 1 batch Greek Yogurt Avocado Salad Dressing (double the cilantro and omit the parsley)

For the Pasta Salad:

  • 1 375g box pasta (short pasta like rotini, fusilli, or penne), cooked according to package directions
  • 1 19 oz. can chickpeas, drained and rinsed
  • 1 12 oz. can corn, drained and rinsed
  • 1 medium cucumber, chopped
  • 1 small red onion, diced
  • 1/2 cup feta cheese or cojita cheese, crumbled
  • Cilantro, optional, for garnish
  • Lime juice, optional, to squeeze on top


Instructions

1. Make the cilantro lime dressing by blitzing ingredients together in a blender or food processor. Set aside.

2. Combine the cooked pasta, chickpeas, corn, cucumber, and red onion together in a large bowl.

3. Drizzle with the dressing and toss until all salad components are well-coated with the dressing.

4. Sprinkle the feta cheese on top and gently toss to mix it into the salad.

5. Serve with a garnish of cilantro leaves and an optional squeeze of lime. Enjoy!


Notes

Meal Prep: If you’re prepping the salad to have on hand for the week, great idea! You can mix everything together and either store it in one big container in the fridge and dish out as needed. Or, divide it up into meal prep containers so you can grab and go.

My one tip would be to save a little dressing to drizzle on before serving each time! This will help make sure you get some of that nice creamy texture with each serving.

Storage: This cilantro lime pasta salad recipe will keep well in the fridge up to 5 days. Make sure to store it in an airtight container!
