Description

This Fresh Peach Salsa is bursting with the flavors of summer. Made with juicy peaches, red onion, jalapeno, lime, and tomato, it’s perfect with chips or served over chicken, pork, or fish.

Ingredients

  • 1 pound (450g) fresh ripe peaches, diced
  • 1 large roma tomato, diced
  • 1/4 cup (30g) diced red onion
  • 1/2 jalapeno, minced (seeds and membrane removed)
  • 2 tablespoons minced cilantro
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

1. Combine all ingredients in a large bowl.

2. Stir gently until well mixed.

3. Serve immediately with chips, tacos, chicken, pork, or fish.

Notes

For a spicier salsa, leave the seeds and membrane (ribs) of the jalapeno, or substitute with a habanero pepper for extra heat.

Store in an airtight container in the refrigerator for up to 4 days.
