Description

A hearty and comforting slow-cooked dish featuring tender beef bites and baby potatoes coated in a rich, savory garlic butter sauce.

Ingredients

  • 1.5 pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth
  • 1 tablespoon olive oil

Instructions

1. Gather all ingredients and cut the beef into bite-sized pieces and halve the baby potatoes.

2. Optional: Parboil the baby potatoes for a few minutes to slightly soften them.

3. Heat olive oil in a skillet over medium-high heat and sear the beef bites until browned on all sides.

4. In a small bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to make the garlic butter sauce.

5. Place the halved baby potatoes and seared beef into the slow cooker.

6. Pour the garlic butter sauce over the ingredients and add the beef broth.

7. Cover and cook on low for 6–8 hours or on high for 3–4 hours until the beef is fork-tender.

8. Let the dish rest for about 10 minutes before serving.

Notes

Parboiling the potatoes helps them cook more evenly and faster.

You can substitute stew meat with chuck roast cut into cubes for extra tenderness.

Add carrots or green beans for more vegetables.

Adjust salt levels depending on the saltiness of your broth.

Leftovers store well in the refrigerator for up to 3 days.
