Description

Tender green beans and savory mushrooms sautéed in garlic butter for a simple, flavorful, and healthy side dish.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 8 ounces mushrooms, sliced
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

1. Trim the ends of the green beans and rinse them under cold water. Set aside.

2. Heat a large skillet over medium heat and add olive oil and 2 tablespoons of butter. Let the butter melt.

3. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

4. Add sliced mushrooms and cook for 4–5 minutes, stirring occasionally, until softened and lightly browned.

5. Add green beans to the skillet and season with salt and black pepper. Stir to combine.

6. Cover the skillet and cook for 5–7 minutes, stirring occasionally, until green beans are tender-crisp.

7. Remove the lid and add the remaining tablespoon of butter. Stir until melted and evenly coating the vegetables.

8. Add lemon juice and stir well to combine.

9. Remove from heat and transfer to a serving dish. Garnish with chopped parsley if desired and serve.

Notes

Add crushed red pepper flakes for a subtle heat boost.

Use cremini or shiitake mushrooms for deeper flavor variations.

Swap butter with a plant-based alternative to make this dish vegan.

Pairs well with roasted chicken, steak, or grilled fish.
