Description

Garlic Butter Shrimp Scampi is a quick and delicious dish that transforms fresh shrimp and pantry staples into a restaurant-quality meal. With rich butter, garlic, white wine, and lemon, this Mediterranean-inspired dinner is ready in just 30 minutes.


Ingredients

For the Shrimp:

  • 1 pound peeled and deveined shrimp (use fresh or thawed frozen shrimp)

For the Sauce:

  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 0.5 cup white cooking wine (dry, such as Sauvignon Blanc)
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice

For Seasoning:

  • 1 teaspoon Italian seasoning
  • 0.25 cup grated Parmesan (optional)


Instructions

1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sauté the shrimp for 1–2 minutes per side until pink and opaque. Remove from skillet and set aside.

2. Lower the heat to medium and add 4 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant.

3. Pour in the white wine and lemon juice. Simmer for about 5 minutes, allowing the sauce to reduce by half.

4. Add Italian seasoning to the sauce. Return the shrimp to the pan and toss to coat in the garlic butter mixture.

5. Cook for an additional 1–2 minutes until shrimp are heated through.

6. Remove from heat. Garnish with grated Parmesan and fresh parsley if desired. Serve immediately.


Notes

Add red pepper flakes for a bit of heat if you like spice.
