Description

Discover the deliciousness of Garlic Parmesan Sweet Potato Wedges, a nutritious snack that combines the natural sweetness of sweet potatoes with savory garlic and creamy Parmesan cheese. This easy recipe not only offers a satisfying crunch but also packs in essential vitamins and antioxidants. Perfect as a side dish, appetizer, or movie night snack, these wedges are a healthier alternative to regular fries.

Ingredients

2 large sweet potatoes

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: ¼ teaspoon red pepper flakes (for heat)

Instructions

1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.

2. Wash and scrub the sweet potatoes thoroughly. Cut them into wedges, about 1 inch thick. This will help them cook evenly and get crispy.

3. In a small bowl, combine the olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using. Mix well to create a flavorful oil blend.

4. In a large mixing bowl, toss the sweet potato wedges with the garlic oil mixture until they are evenly coated.

5. Sprinkle half of the grated Parmesan cheese over the wedges and mix again to ensure even coverage.

6. Spread the sweet potato wedges in a single layer on the prepared baking sheet, making sure not to overcrowd them for optimal crispiness.

7. Place the baking sheet in the preheated oven and bake for 25-30 minutes, turning the wedges halfway through for even cooking. They should be golden brown and crisp on the outside.

8. Remove from the oven, and while the wedges are still hot, sprinkle the remaining Parmesan cheese on top and allow it to melt slightly.

9. Transfer the wedges to a serving platter and sprinkle fresh parsley over the top for a pop of color. Serve immediately with your favorite dipping sauce or enjoy them as they are!

Notes

For extra crispiness, soak the cut sweet potato wedges in cold water for 30 minutes before seasoning and baking. Make sure to pat them dry thoroughly before tossing with oil. Adjust the seasoning to taste or experiment with your favorite herbs and spices.
