A fast and flavorful Greek-style chicken dish featuring a zesty lemon-garlic marinade and baked feta for a bright, satisfying meal.
Ingredients
- 2 lemons, juiced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 boneless, skinless chicken breasts
- 1 cup crumbled feta cheese
- Fresh parsley, chopped (for garnish)
Instructions
1. Preheat oven to 400°F (200°C).
2. In a bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper.
3. Add chicken breasts and coat well. Marinate for at least 30 minutes (or 10–15 minutes if short on time).
4. Arrange chicken in a baking dish and pour remaining marinade over the top.
5. Bake for 25–30 minutes, until chicken reaches an internal temperature of 165°F (74°C).
6. Remove from oven and sprinkle crumbled feta evenly over the chicken.
7. Broil for 3–5 minutes until feta is lightly golden, watching carefully to prevent burning.
8. Garnish with chopped parsley and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in a 350°F oven for 10–15 minutes or microwave in short intervals until warmed through.
For meal prep, slice chicken and store with grains or salad for easy meals.
