Description
Ground beef macaroni soup is ready in under 30 minutes and is absolutely delicious! Hearty, comforting, and perfect with homemade rolls.
Ingredients
- 1 pound lean ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 6 cups beef broth
- 14.5 oz can diced tomatoes with juice
- 1 Tbsp Worcestershire sauce
- 1 Tbsp granulated sugar (or brown sugar)
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups dry macaroni noodles
- 1 1/2 cups frozen mixed vegetables
Instructions
1. In a large soup pot, brown the ground beef and onion over medium-high heat. Add garlic and cook another minute. Drain off any excess fat.
2. Add the broth, diced tomatoes, Worcestershire, sugar, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat to medium. Simmer for 5 minutes.
3. Add the macaroni and simmer for about 8 minutes, or until noodles are tender.
4. Add the veggies and heat through. Taste and add salt or additional seasonings if desired.
Notes
Sugar may seem like a strange ingredient in soup, but it helps cut the acidity of the tomatoes.
Use whole wheat or gluten-free macaroni for dietary preferences.
Leftovers store well in the fridge for up to 4 days and can be reheated on the stovetop or microwave.
Serve with crusty bread, homemade rolls, or a fresh green salad for a complete meal.
