Description

This healthier chocolate chip banana bread is soft, moist, and naturally sweetened with coconut sugar. It’s dairy-free, gluten-free, and made with wholesome oat flour for a comforting breakfast or snack that satisfies your sweet tooth the smart way.


Ingredients

Scale
  • 3 spotty bananas
  • 2 eggs
  • 2 cups oat flour (see note for homemade)
  • 1/2 cup coconut sugar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 1 tsp baking soda
  • A few shakes of cinnamon
  • Chocolate chips (mixed in and for topping)

Instructions

  • Preheat oven to 350°F and line a loaf pan with parchment paper.
  • In a large bowl, mash bananas with a fork.
  • Add eggs, oat flour, coconut sugar, oil, sea salt, baking soda, and cinnamon. Mix well.
  • Stir in chocolate chips.
  • Pour batter into lined loaf pan and top with additional chocolate chips.
  • Bake for 50–55 minutes, or until a toothpick comes out clean.
  • Cool before slicing and enjoy!

Notes

  • You can make oat flour by blending rolled oats in a high-speed blender until fine.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freezes well when sliced and stored in individual freezer bags.
