Description
This sweet, savory, and healthy recipe for chicken salad is packed with shredded chicken, grapes, pecans, and celery. A delicious, satisfying lunch!
Ingredients
- 3 cups shredded, cooked chicken (rotisserie or poached)
- 1 cup sliced grapes
- 1/4 cup chopped pecans, raw or dry roasted
- 3 stalks celery, diced
- 1/3 cup mayo
- 1/2 tsp sea salt, more or less to taste
- 1/4 tsp black pepper
- 1/2 tsp celery seed
- 1/2 tsp paprika
Instructions
1. Add all of the ingredients into a large bowl.
2. Mix well until combined.
3. Refrigerate until ready to eat. Can be stored in the fridge for up to 5 days.
Notes
To make easy poached chicken breasts: Bring a large pot of water to a boil with chicken breasts inside. Once boiling, cover and remove from heat. Let sit for 15 minutes before shredding.
Variations: Add diced apple, cranberries, walnuts, or any nut of choice. This salad is highly customizable!
