A creamy and refreshing healthy cucumber pasta salad made with tender penne, crisp cucumber, and a dill-infused dressing—perfect for make-ahead meals and summer gatherings.
Ingredients
- 8 oz penne pasta
- 1/2 white onion, finely minced
- 1 English cucumber, diced into 1/4-inch pieces
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tbsp vinegar
- 2 tbsp fresh dill, finely chopped
- 1 tsp sugar
- 1/2 tsp salt
- Black pepper to taste
Instructions
1. In a small bowl, combine mayonnaise, sour cream, vinegar, fresh dill, sugar, salt, and black pepper. Mix well until smooth and set aside.
2. Thinly slice or mince the onion and soak it in a bowl of cold water to mellow the flavor. Drain before using.
3. Cook the penne pasta al dente according to package directions.
4. Drain the pasta and rinse under cold water to stop the cooking process. Allow it to drain thoroughly.
5. Cut the cucumber lengthwise, remove the seeds with a spoon, and dice into small 1/4-inch pieces.
6. In a large bowl, combine the cooled pasta, drained onion, and diced cucumber.
7. Pour the prepared dressing over the salad and toss until everything is evenly coated.
8. Refrigerate for at least 40 minutes before serving to allow the flavors to meld together.
Notes
Soaking the onion in cold water helps reduce its sharp bite.
For extra flavor, add a squeeze of fresh lemon juice before serving.
This salad tastes even better the next day after chilling.
