Description

This Hearty Ground Beef and Cream of Chicken Soup combines savory ground beef, creamy soup, and tender egg noodles for a comforting, satisfying meal. Topped with melty cheddar cheese, it’s an easy weeknight favorite the whole family will enjoy.

Ingredients

  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 lb ground beef
  • 1/2 cup chopped onion (finely diced for better integration)
  • 8 oz egg noodles (cooked al dente according to package directions)
  • 8 oz grated sharp cheddar cheese (I like Tillamook for its flavor)
  • 10 oz cream of chicken soup
  • 4 oz cream cheese (softened to room temperature)

Instructions

1. Begin by browning the ground beef in a skillet over medium heat.

2. Once the beef is cooked through, drain any excess fat from the skillet.

3. Add finely diced onion, a dash of salt, and some pepper to the beef.

4. Continue cooking over medium heat until the onions are tender and translucent.

5. While the beef and onions are cooking, prepare the noodles according to the directions on the package.

6. Once the noodles are cooked, drain them well and set them aside for later use.

7. Cut the cream cheese into thinner slices to make melting easier.

8. Add the cream cheese to the cooked ground beef and onion mixture.

9. Use a spatula to stir continuously until the cream cheese is completely melted and evenly mixed with the beef.

10. Add a can of cream of chicken soup to the skillet containing the beef and cream cheese mixture.

11. Stir well until all the ingredients are thoroughly combined, creating a creamy texture.

12. Add the cooked noodles to the skillet with the creamy beef mixture.

13. Stir gently until the noodles are evenly coated with the sauce, making sure to mix thoroughly for uniform flavor distribution.

14. Sprinkle cheddar cheese evenly over the top of the noodle and beef mixture in the skillet.

15. Cover the skillet for 2 to 3 minutes to allow the cheese to melt.

16. Once the cheese is melted, serve the dish warm and enjoy!

Notes

You can add a handful of frozen peas or steamed broccoli for extra nutrition.

Substitute cream of chicken soup with cream of mushroom for a different twist.

Use rotini or shell pasta if you don’t have egg noodles on hand.

For a spicier kick, stir in a pinch of red pepper flakes with the onions.
