Description

This hearty tortellini soup is loaded with sausage, ground beef, vegetables, and cheese-filled tortellini simmered in a savory broth.


Ingredients

  • 1 tbsp olive oil
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup sliced carrots
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 2 Italian sausage links, sliced
  • 1 can (28oz) tomatoes, chopped
  • 4 cups beef stock
  • 1 can (14oz) kidney beans, drained
  • 2 cups chopped cabbage
  • 1 cup green beans
  • 1 cup diced zucchini
  • 1/2 tbsp sugar
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 cup dry red wine
  • 2 cups cheese-filled tortellini
  • 2 cups shredded spinach
  • 1/2 cup Parmesan cheese


Instructions

  • Heat oil in large pot over medium heat.
  • Add onions, celery, carrots, and garlic; cook 5 minutes.
  • Stir in beef and sausage; cook until browned.
  • Add tomatoes, stock, beans, cabbage, green beans, zucchini, sugar, and herbs; simmer 30 minutes.
  • Stir in wine, tortellini, and spinach; cook 20 minutes until pasta is tender.
  • Taste, adjust seasoning, and serve with Parmesan.

Notes

  • Best served with crusty bread or salad.
  • Soup deepens in flavor the next day.
