Description
This hearty tortellini soup is loaded with sausage, ground beef, vegetables, and cheese-filled tortellini simmered in a savory broth.
Ingredients
- 1 tbsp olive oil
- 1 cup chopped onions
- 1 cup chopped celery
- 1 cup sliced carrots
- 2 cloves garlic, minced
- 1 lb ground beef
- 2 Italian sausage links, sliced
- 1 can (28oz) tomatoes, chopped
- 4 cups beef stock
- 1 can (14oz) kidney beans, drained
- 2 cups chopped cabbage
- 1 cup green beans
- 1 cup diced zucchini
- 1/2 tbsp sugar
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 1/2 tsp salt
- 1 tsp pepper
- 1/2 cup dry red wine
- 2 cups cheese-filled tortellini
- 2 cups shredded spinach
- 1/2 cup Parmesan cheese
Instructions
- Heat oil in large pot over medium heat.
- Add onions, celery, carrots, and garlic; cook 5 minutes.
- Stir in beef and sausage; cook until browned.
- Add tomatoes, stock, beans, cabbage, green beans, zucchini, sugar, and herbs; simmer 30 minutes.
- Stir in wine, tortellini, and spinach; cook 20 minutes until pasta is tender.
- Taste, adjust seasoning, and serve with Parmesan.
Notes
- Best served with crusty bread or salad.
- Soup deepens in flavor the next day.
